Osti in Orto is a unique farm-to-table project created by 13 Venetian restaurateurs who’ve come together to cultivate their own seasonal produce on the island of Sant’Erasmo—Venice’s historic agricultural heart. Led by Cesare Benelli (Al Covo) with Alvise Cinelli, the initiative was born in 2020 to reconnect local cuisine with the land. On a four-hectare plot managed by environmental biotechnologist Mario Saviolo, vegetables, herbs, and spices are grown using traditional, sustainable methods—including planting by the lunar calendar. Everything harvested is used directly in the kitchens of the participating restaurants, offering guests exceptional flavor and unmatched freshness.
